Harvest & Aging
During the grape harvest, the grapes are carefully selected and hand-picked. Subsequent processing takes place at appropriate temperatures.
Fermentation and maceration take place in stainless steel tanks at a controlled temperature. Afterwards, the Gamza is allowed to age for 4 months in French barriques.

grilled pork and beef,
aged hard cheeses such as sheep and goat milk cheeses.
