Tasting Notes:
Beautiful golden yellow color; the aromas of noserose recall pods, bulrushes and elderflower; the body is medium and elegant; the palate is juicy and lively; the finish is harmonious and refreshing with citrus; balanced and persistent wine that can be served with cold meats and mild cheeses and olive bread or tapenade, also with fish and seafood.

Region:
The Thracian Plain is part of the large southern Bulgarian wine region. It is well protected from cold winds north of the Balkan Mountains and further from the south central part of the Rhodopes.

Climate and soil:
Temperate with over 3,000 hours of sunshine during the year and over 110 clear days. Hot, dry summers with warm nights. Soft and warm winters without spring frosts. Sandy-loamy and calcareous soils.

Harvest:
Careful selective hand harvest in crates followed by sorting of the grapes in the winery.

Vinification:
White grapes are processed using classic techniques such as cooling of the grapes, sorting, selection and direct pressing after clarification of the must and alcoholic fermentation at 12-14°C.
