Tasting notes:
Soft yellow color. The nose is sweet with hints of white flowers, candied citrus and vanilla. Light to medium bodied, fresh and sweet on the palate with citrus, seeds and ripe apples on the finish. Balanced white wine that pairs well with spicy vegetarian dishes such as pakora and guacam.

Grape variety: 35% Pinot Gris, 40% Viognier, 25% Grenache Blanc.

Region:
The Thracian Plain is part of the large southern Bulgarian wine region. It is well protected from cold winds north of the Balkan Mountains and further from the south central part of the Rhodopes.

Climate and soil:
Temperate with over 3,000 hours of sunshine during the year and over 110 clear days. Hot, dry summers with warm nights. Soft and warm winters without spring frosts. Sandy-loamy and calcareous soils.

Harvest:
Careful selective hand harvest in crates followed by sorting of the grapes in the winery.

Vinification:
White grapes are processed using classical techniques that include cooling of the grapes, sorting, selection and direct pressing. After clarification of the must and alcoholic fermentation at 12-14°C. Retention, maceration and stirring.
