Tasting notes:

Beautiful and bright light pink colour - salmon. The nose is fresh and attractive with cherry notes, raspberry jam, smoky and minty nuances.Lively, elegant and fresh, with very good acidity and strong tones of samardala (Bulgarian green spicy salt) and other herbs like dry mint. Harmonious, salty and refreshing, this rosé goes well with salads and dishes with garlic sauce or spring onions - an unusually tough combination with wine - and with Bulgarian toasts like "Princess" sprinkled with samardala, or with classic burgers.

Grape variety: 100% Pinot Noir

Region:
The Thracian Plain is part of the large southern Bulgarian wine region. It is well protected from cold winds north of the Balkan Mountains and further from the south central part of the Rhodopes.

Climate and soil:
Temperate with over 3,000 hours of sunshine during the year and over 110 clear days. Hot, dry summers with warm nights. Soft and warm winters without spring frost. Sandy, loamy and calcareous soils.

Harvest:
Careful selective hand harvest in crates followed by sorting of the grapes in the winery.

Vinification:
The grapes are processed using classical techniques, i.e. cooling of the grapes, sorting, selection and direct pressing of the grapes, after clarification of the musts and alcoholic fermentation at 12-14°C. Retention on sediment and stirring.
