Tasting notes:
Fine greenish color of straw, brilliant and clear. Varietal, fine nose with notes of hay and boxwood, white peach and elderberry.
Ethereal body with good medium structure and refreshing, long citrus finish to taste.
A Sauvignon with elegance and attraction that goes wonderfully with summer salads, vegetable dishes and delicate fish with white meat.

Region:
The Thracian Plain is part of the large southern Bulgarian wine region. It is well protected from cold winds north of the Balkan Mountains and further from the south central part of the Rhodopes.

Climate and soil:
Temperate with over 3,000 hours of sunshine during the year and over 110 clear days. Hot, dry summers with warm nights. Soft and warm winters without spring frosts. Sandy-loamy and calcareous soils.

Harvest:
Careful selective hand harvest in crates followed by sorting of the grapes in the winery.

Vinification:
White grapes are processed using classic techniques such as cooling of the grapes, sorting, selection and direct pressing after clarification of the must and alcoholic fermentation at 12-14°C.
