Tasting notes:
Soft, pale yellow color with beautiful green nuances. Elegant and fresh, the nose is dominated by fern and green apple tones. Refreshing, citrusy and "flexible" in the mouth, the wine offers you a long and fine finish with well preserved fruity sweetness. This is a wonderful summer wine to serve as an aperitif; also serve it with green salads, shrimp or octopus, hummus and other appetizers, as well as with the wine leaves sarma, spinach or hollow fried balls, banitza with spinach or sorrel typical of Bulgarian summer cuisine.

Grape variety: 37% Viognier, 33% Pinot Gris, 30% Sauvignon Gris.

Region:
The Thracian Plain is part of the large southern Bulgarian wine region. It is well protected from cold winds north of the Balkan Mountains and further from the south central part of the Rhodopes.

Climate and soil:
Temperate with over 3,000 hours of sunshine during the year and over 110 clear days. Hot, dry summers with warm nights. Soft and warm winters without spring frosts. Sandy-loamy and calcareous soils.

Harvest:
Careful selective hand harvest in crates followed by sorting of the grapes in the winery.

Vinification:
White grapes are processed using classical techniques that include cooling of the grapes, sorting, selection and direct pressing. After clarification of the must and alcoholic fermentation at 12-14°C. Retention on sediment and stirring.
