From processing plant to manufacturer

The company "Merone", founded in 1992, has grown from a small processing plant to the leading producer of yellow cheese "Kashkawal", brine cheese "Sirene" and dairy products. The products of "Merone" have been awarded a gold medal for quality. The factory occupies almost 5000 square meters in the industrial zone of Alfatar city.

The company has long experience and established traditions in buying, processing and utilization of milk and dairy products on the Bulgarian and international market.

The distribution network is based on the territorial principle and includes 70 farms and collection points in the following administrative regions - Silistra, Dobrich, Shumen and Razgrad. The fresh milk collected for the production of all "Merone" brand products is of very high quality due to the high quality control during collection and qualification.

Technology and production at Merone

The recipe for the production of yellow cheese Kashkaval at "Merone" is based on authentic recipes and has been mastered and refined over the years by experts of the company. The various cheese variations have been designed according to the requirements of Bulgarian and European legislation and are part of the internal control system.

For the production of the yellow cheese "Merone" 100% pure natural fresh milk is used, which is treated at a temperature of 63 ° C to 65 ° C. The aim of this process is to reduce the harmful bacteria while preserving the beneficial lactic acid bacteria. This is followed by a process of lactic acid fermentation and burning in a saline solution at 72 to 74 ° C. The last, but very important stage is the maturing process.

The quality control process is a priority unit of the Merone company. In 2013 Merone was certified according to the international standard FSSC 22000 - System for the management and control of food safety.

Latest technology at Merone

A new plant for whey concentration was built by R.O. (reverse osmosis) process, developed by a team of engineers from RuSys EOOD (Eng. Rumen Stefanov and Eng. Kiuchukov). The whey concentration plant is equipped with membranes that filter practically all the whey ingredients. Only pure water is available for processing. Whey concentrate is a product with high nutritional value.
