Logodaj Melnik 55 - a red wine like the Struma Valley.
When poured, Logodaj Melnik 55 reveals its dark, intense red color. Violet reflections give a foreshadowing of its charming nature. This is revealed in all its elegance through a bouquet with hints of fresh fruit and ripe cherry, as well as spicy accents. Sweet notes of vanilla, manifested during aging in barrique, support the balanced character of the wine. In the mouth, the wine has soft tannins and a silky structure that leaves a rich and persistent aftertaste.

Pure grape wine from Early Melnik
Logodaj Melnik 55 comes from the Logodaj winery in the village of the same name. It is located in the heart of the Struma Valley, which forms the southwest of Bulgaria. A special place in the region is occupied by the old, late-ripening grape variety Melnik. It is named after its area of origin in the surroundings of the Struma Valley town of Melnik. In the middle of the 20th century, it gave rise to the early ripening variety Melnik 55. It is also grown almost exclusively in the vicinity of Melnik and bears the alternative name Early Melnik due to its early ripening characteristics.

The vineyards of Logodaj Melnik 55 - low yield, high quality
The vineyards of the Logodaj estate are also located at about 200 meters above sea level in this region. The Logodaj Melnik 55 was created with the aim of presenting the typical characteristics of the region in an outstanding wine. Deep clay-sand soils here support long ripening periods as well as the emergence of equally complex and concentrated aromas. The density of around 6,000 vines per hectare further enhances quality and limits yields to just under 8,000 kg/ha. They produce less than 4,500 l/ha of Early Melnik wine. Also thanks to the cordon training of the vines, which are on average about 15 years old, the sugar and phenolic content of the Early Melnik grapes remain in an excellently balanced ratio until the harvest takes place in September.

Fermentation on the skins and aging by hand bring out the freshness and balance.
From the vineyard it goes immediately to the cellar for maceration. The mash first goes through a process called maceration. This is a natural process that extracts aromatic substances from berries, skins and stems. At a temperature of only 8 to 10 °C, fermentation slows down for 4 or 5 days. This is the reason for the fresh aroma of Logodaj Melnik 55. This is followed by the continuation of fermentation for about 10 days at 23 to 25 °C. Now the wine can be drawn off from the mash to enter barrique barrels for two cycles. During the first phase, a second, so-called malolactic fermentation takes place. This is a malolactic fermentation, which is only successful with very high quality grapes and emphasizes their harmonious and balanced characteristics. Finally, the second cycle allows the Early Melnik wine to develop and refine its aromatic structure until it can be bottled after a total of 12 months in barrique.
