About the Santa Sarah Winery
The Santa Sarah Estate has 40 hectares of land in the village of Goritza near Pomorie and Nesebar in the southern part of the Black Sea. There a new vineyard is being created with a small and beautiful modern winery. In 2013 the construction of a completely new winery near Santa Sarah was completed.
Philosophy & Technology at Santa Sarah
The technology and philosophy of winemaking in Santa Sarah is based exclusively on a minimum of roughness over the grape must and, from where, over the wine produced from it. This is achieved first of all by a careful selection of the grapes in the vineyard. Only well ripened and intact grapes fall into the crates in which the grapes are transported. Via refrigerated trucks the grapes arrive at the winery well cooled and sorting begins immediately. The low temperature gives a good start to the cold ripening, which lasts for 14 days. The small capacity of the vats, from 10 to 50 hl, with which Santa Sarah works, allows a perfect control of the temperature during the two to four-week alcoholic fermentation.
The young wines mature 100% in French oak barrels of the "barrique" type for 8 to 12 months and the relationship between young and mature is interpreted individually for each wine.
Santa Sarah's exclusive export
80% of Santa Sarah's wine production is sold in Germany, Austria, Switzerland, Finland, Belgium and the Netherlands. Most of the 300 000 bottles per year are the well established brands Tsar Simeon and Tsar Simeon BIN 40, which are produced each year exclusively for the German market.
